Evening Preparation:
3 cups whole wheat flour
2 1/2 cups milk
1 1/2 Tablespoons or 1 package of yeast
1 Tablespoon sugar
1/2 cup warm water
Morning Mixing:
4 Tablespoons oil
2 teaspoons soda
4 Tablespoons sugar
4 egg yolks
3/4 teaspoon salt
4 egg whites
The evening before you plan to serve sour dough pancakes mix flour and milk and beat until smooth. Dissolve yeast and sugar into 1/2 cup of warm water. After the yeast begins to bubble and grow mix in the flour and milk combination. Cover with a cloth and let this sit out overnight.
In the morning add oil, soda, sugar, egg yolks, and salt to the sourdough mixture you created the night before. Mix this together, then fold in your egg whites. If the mixture is too thin sprinkle in flour and mix until you reach the desired consistency.
Cook on the griddle and serve with strawberries and whipped cream.
Would it be advisable to replace the yeast in this recipe with a starter, so the sourdough pancakes can actually be made with sourdough?
Absolutely!
